Soybean jam of Bo Village

PTO- The soybean jam of Bo village in Thach Dong commune, Thanh Thuy district has become the major income for local people. The soybean jam making, which is totally handmade, is preserved through the generations so that retaining its unique flavor. It is a meaningful famous speciality as well as souvenir for visitors. The families of Tran Thi Phuong and Nguyen Thi Thanh Xoa are currently the two largest producers in the village with 4 generations making soybean jam, consuming about 8 tons of rice per year as raw materials.


To create a perfect product, the first step is cooking rice then fermenting until it turns to mould in about 1 week. After that, the mould will be dried in the sun.


Next is to mix dry mould with bean water which was made by soaking bean with the characteristic well-water of this region.


Ms. Nguyen Thi Thanh Xoa (79 years old) is mixing dry mould, bean water and salt then keeping it carefully within 1 to 2 months in the jar.


The mixture after drying in the sun is light yellow. That means a perfect soybean jam with a good
tasty is completed.


Ms. Tran Thi Phuong is bottling and labeling for distribution to consumers in Thanh Thuy district or other localities all over the country.
