In early summer, when early rains refresh the hillsides, cassava plants sprout vibrant, lush green shoots. This is also when locals begin harvesting leaves for fermenting. The task seems simple, yet demands meticulous attention right from selecting the ingredients. Not every cassava variety yields delicious leaves. People usually choose sticky cassava, also known as native cassava, which features green leaves, low sap content, and a rich, sweet taste. Young buds that have just sprouted, still covered in a fine layer of white powder, make the best portion.

In Tram Than, a few slices of fresh bamboo shoots are often added when fermenting cassava leaves.

Leaves are harvested entirely by hand, selecting only standard-quality shoots so they retain their crispness and natural sweetness after processing. Once picked, older leaves are discarded, and the rest are thoroughly washed and vigorously crumpled by hand to purge the sap. This stage determines the quality of the dish: if not crumpled thoroughly, the leaves retain an astringent taste; if crumpled too hard, the leaves bruise and lose their crunch.

Ms. Ta Thi Tam from Dai Thang Village, Tram Than Commune, shared that making fermented cassava leaves requires experience — from leaf-crumpling to mixing the brine. After crumpling, the leaves are rinsed multiple times until the water runs clear, then mixed with a balanced amount of salt before being packed into jars or pots to ferment for 3 to 5 days, depending on the weather. Too little salt makes the leaves prone to scum; too much salt causes the soup to lose its signature mild sour taste.

Transitioning from a home-cooked family meal, fermented cassava leaves have now entered the market with a fresh look. To meet consumer demands, the Lien Gia Trang Agricultural Production and Processing Cooperative in Tien Luong Commune developed “Phu Tho Cassava Leaf Specialty.” Several business households have also standardized their processing and preservation procedures, creating OCOP products well recognized in the market. The leaves are harvested from designated material areas, pre-processed under hygienic food safety standards, packaged with traceability QR codes, and cold-stored for about 20 days. Participating in the One Commune One Product (OCOP) Program not only enhances product value but also expands consumer distribution, offering this traditional dish greater opportunities to reach provinces across the nation.
