The Mid-Autumn Festival is approaching, and mooncakes are widely available on the market. The round, sweet mooncakes are gifts that convey feelings and deep gratitude to loved ones. And Tung Linh mooncakes, a 3-star OCOP product of Ha Hoa district, have become the choice of many customers in and outside the province.
The traditional mooncakes of Ms. Nguyen Thi Thuy Linh’s family have achieved 3-star OCOP certification.
Since entering the traditional mooncake-making profession, Ms. Nguyen Thi Thuy Linh’s family in Ha Hoa town has always believed that the baker must always put their heart into each cake produced. The mooncakes that reach consumers must retain the traditional flavor. It is the passion and dedication of Ms. Linh’s family to the profession that has made the difference for the mooncake products under the Tung Linh brand.
Previously, Linh’s family only made cakes on holidays, the Mid-Autumn Festival, or when customers ordered. Gradually, realizing that the cakes were known and loved by many diners not only in the district and in the province but also in other localities, her family started to produce them more regularly. To make a traditional moon cake, it must go through many meticulous stages, requiring not only the skillful hands but also the experience and dedication of the baker. The cakes must ensure food hygiene and safety, quality, and retain the traditional flavor.
Witnessing the stages of making moon cakes, we clearly felt the meticulousness in the production process of each moon cake. The first step is kneading the dough and then dividing the dough evenly to roll it into the cake shell. Even though it has been through a mixer, the dough is still kneaded by hand again to ensure its softness and smoothness. If in the past, moon cakes only had green beans and mixed fillings, today they are more diverse, such as red beans, lotus seeds, green rice, etc. After putting the filling into the cake crust, the baker presses the cake into the mold to form it. Before putting it in the oven, the cake will be brushed with a layer of egg yolk on the surface to create a fragrant and naturally beautiful color and prevent the cake crust from cracking. Next is baking, and finally the packaging stage. Not stopping at quality and flavor, the moon cakes are also packaged in meticulously designed gift boxes with delicate patterns and elegant colors.
Tung Linh moon cakes are very familiar to Ha Hoa people.
Recognized as a 3-star OCOP quality product in 2023, Tung Linh-branded moon cakes have been increasingly affirming their position, increasing family income and contributing to enriching local cuisine. Ms. Nguyen Thi Thuy Linh, owner of Tung Linh Mid-Autumn Festival Cake Production Facility, said: "Tung Linh Mid-Autumn Festival Cakes always ensure reasonable prices for consumers; the cake lines are priced from 40,000 to 45,000 VND/piece, including many familiar traditional fillings such as green beans, pandan leaves, taro, red beans, green rice, durian, mixed... With the development of technology, online sales channels also play an important role in introducing Mid-Autumn Festival cake products to consumers through social networking sites, websites... At the same time, helping consumers easily access and choose the products they like without having to travel a lot.".
Along with traditional Mid-Autumn Festival cakes, many key products of Ha Hoa district, such as tea, honey, catfish, sturgeon, papaya, orange, melon, cassava cake, etc., are increasingly developing, affirming their reputation with consumers and bringing a stable source of income for people. In addition to the initiative of the subjects, Ha Hoa district is implementing many solutions to encourage enterprises, cooperatives, and people to promote the application of scientific advances in the production of OCOP products, thereby increasing the value of agricultural products and creating income for local people, contributing to sustainable poverty reduction.
